JACKSON - Like most Mississippians, my taste for fried Delta catfish exists at a very elemental level. I suspect it's part of my DNA.
But I'm particular about just which Delta produces my catfish. I prefer mine to be from the Mississippi Delta, not the Mekong Delta.
