CORNBREAD BITES
2/3 cup flour
½ cup yellow cornmeal
1 tablespoon sugar
1½ teaspoon baking powder
¼ teaspoon salt
½ cup shredded sharp cheddar cheese
½ cup sour cream
¼ cup thinly sliced green onions
1 (8¾-ounce) can cream-style corn
Dash of hot sauce
1 large egg, slightly beaten
Preheat oven to 375 degrees. Mix the first five ingredients in a large bowl. Add all other ingredients and stir until moistened. Spray miniature muffin tins with Pam, and divide batter evenly into each cup. Bake for 10 minutes or until golden brown. Cool for two minutes and remove from pan.
SAUSAGE CUPS
1 pound of your favorite ground sausage
1 (8-ounce) package shredded cheddar cheese
1 (16-ounce) container of sour cream
1 regular package dry ranch salad dressing mix
4 packages frozen phyllo (Filo) cups
Brown sausage in a skillet and drain well. Mix remaining ingredients, and divide evenly into Filo cups. Bake at 350 degrees for 30 minutes.
HAM AND CHEESE SKEWERS
½ pound sliced smoked ham, cubed
Assorted cheese cubes
Apple slices, cut into thirds
Coarse grain mustard or chutney
Thread cheese, apple and ham onto 4-inch skewers. Place on plate and cover with damp paper towel to chill. Serve with coarse grain mustard or chutney.
