The late Dorsey J. Barefield was a successful businessman and entrepreneur who owned several businesses and significant real estate developments in the Jackson area. The cornerstone of his business holdings was Barefield & Co., a 60-plus-year-old company that continues operations in the downtown Jackson area. Mr. Barefield passed away in 2004. Prior to his death, Mr. Barefield established the Dorsey J. Barefield Charitable Trust, which is a foundation that provides monetary awards on an annual basis to worthy organizations and non-profits. Mr. Barefield worked his way through college at Southwestern at Memphis, now known as Rhodes College. He received an athletic scholarship and played varsity football for several years, and he maintained a life-long interest in athletics, scholastic achievement and sportsmanship.
Mr. Tom Rice has served as assigning secretary of the District 6 Region 4 Football Officials Association for many years. He also served as a referee in the Mississippi Association of Independent Schools for more than 37 years. Tom has also given countless hours of service to MAIS on many special projects and game management of countless state championships and all-star games, and exemplifies the dedication, moral character and leadership that Mr. Barefield so deeply admired.
Each year, the Dorsey Barefield/Tom Rice Sportsmanship Award is given to an MAIS school that exemplifies good sportsmanship, compliance with MAIS guidelines and conduct of all aspects relating to game management during each year’s football season. An Advisory Committee composed of eight Region 4 football officials, makes a recommendation to the Board of the Barefield Trust in late October as to the recipient of this award.
This year our school, Benton Academy, was the proud recipient of this prestigious award. My husband, Headmaster Steve Flemming, received the award and check for $2,000 before the 2017 MAIS All-Star football game at Jackson Prep. The cash award will be used for the football program at Benton Academy, as Mr. Barefield’s wish.
This was such an honor for our school, as well as its faculty, administration, fans, players and coaches. We are honored to receive this award and will continue to strive to always do our very best in all aspects of our school’s activities.
Today, I have two recipes for enjoying and sharing with friends — one is salty and one is sweet. I hope you will give them a try. Thanks for reading.
MUDDY BUDDIES
(We used to call this “Dog Chow.”)
3 cups Rice Chex cereal
3 cups Corn Chex cereal
3 cups Chocolate Chex cereal
1 cup semisweet chocolate chips
½ cup peanut butter
¼ cup butter
1 teaspoon vanilla
1½ cups powdered sugar
Pour cereals into a large bowl and set aside. Microwave chocolate chips, peanut butter and butter at one-minute intervals until they can be stirred smooth. Then add vanilla. Pour mixture over cereal and gently stir until evenly coated. Pour into a 2-gallon Ziploc bag. Add powdered sugar, and shake until well-coated. Spread on waxed paper to cool and store in airtight containers.
ORIGINAL CHEX MIX
(My Mama makes this every year,
and we fight over it. You can make this your own way by adding what you like — everything from Cheese Nips, pecans, Goldfish crackers, sesame sticks, etc. The sky is the limit.)
3 cups Corn Chex cereal
3 cups Rice Chex cereal
3 cups Wheat Chex cereal
1 cup mixed nuts
1 cup bite-sized pretzels
1 cup garlic-flavored bite-size bagel chips
6 tablespoons butter
2 tablespoons Worcestershire sauce
2 teaspoons seasoned salt
1 teaspoon garlic powder
½ teaspoon onion powder
In a large microwaveable bowl, mix the cereals, nuts, pretzels and bagel chips. Set aside. Microwave butter and remaining ingredients until melted, and stir well. Pour evenly over cereal mixture, and microwave uncovered on high for six minutes, stirring every two minutes. Spread on paper towels to cool. Store in an airtight container.
